In Thai cooking the wok rules. On a low flame a pad thai stews; on the heat it deserves, it sears in seconds and the noodle stays loose. That is why nothing here comes off a tray: every dish starts when you order it.
The curry paste is ground in-house each morning, and the heat is set dish by dish. If you want it the way it is eaten in Bangkok, say so and that is how you'll get it.
